We like to make different salsa recipes. Incorporating new fruits or beans is always fun to try depending on the season and what we can grow or buy organically. Salsa has so many great benefits and is a great snack versus say potato chips and dip.
We have some basics for this recipe. The green pepper and jalapeno came from the garden! I dream of being able to pick limes off of a tree in my backyard! Avocado is a bit of the good fat that we need in our diet everyday.
Mango's have the antioxidants that work with the prevention of cancer, also they are good for your skin. They are also high in fiber. I am 47 which means I am a lot more aware of the benefits in my foods versus when I was in my 30's in more calories.
Doesn't this look pretty? Fresh ingredients. But wait, I had to add the canned goods. My hubby likes a lot of juice and I just finished canning all the tomatoes in the garden.
- 3 Can Tomatoes and Green chilies
- 1 Can Green chilies
- 1 Can Chick Peas
- 1 can Corn and Pepper mix
- 1 Avocado
- Half Juice of 1 Lime
- 1 Mango
- 1 Nectarine
- Half Red Onion
- 1 or 2 jalapenos depending on your heat level
- One tablespoon garlic
- Dash of Sea Salt
- Chop all the ingredients
- Add the lime, garlic and sea salt
- Open all the canned items and add to the fresh chopped
I mean easy peasy!
Nutritious! This is great also on top of a baked potato, fat free chips for nachos and added into a wrap with protein.
