Penna Gourmet Foods provides fresh olives to cure at home for the people who enjoy the art of home processing and canning. Umm that is me totally. I dream of moving West and having my own olive trees along with grapevines for making wine and jarring my olives. I received my fresh olives and was ready to begin the process of curing them.. I went to their recipe tab to get an idea of how I want to add the flavor after the curing process.
Part One Curing Olives.
- Rinse them
Once they are rinsed it is time to give them a little bit of a crack. This lets the bitterness in the olives seep out into the water.It will disappear via osmosis. You can read more about the technical process and check out the olives for sale at Great Olives.
- Crack Them
- Place in water covered for at least ten days. Changing the water Every Day.
My attempt at cracking needs some practice. I decided to use a knife and make a slit in each olive. Check out my big FAIL coming soon on Video.
