Mexican Egg Bake Burritos

Hubby and I were heading to Walmart over the weekend so we decided to eat breakfast at home versus go out after shopping like we usually do. I told him to go out and mow the lawn while I prepare a good breakfast. :-)

 Ingredients


  1.  One Green pepper
  2.  One Red Onion
  3.  One Jalapeno
  4. 5 Eggs
  5. 1 Can Black Beans
  6. 1 Can Tomatoes and Green Chilies
  7. 1 Cup Shredded Cheese





Directions
  • Chop the Onion, Green Pepper and Jalapeno
  • Saute in a dash of olive oil

  • Add the Black Beans

  • Add The Tomatoes and Green Chilies

  • Mix your eggs, I add a dash of water too..
  • Add the mixture from the pan into a baking dish
  • Then add the eggs
  • Top with your cheese
  • Bake at 350 Degrees for thirty minutes


Eat as is or roll into a flour tortilla and top with cheese and salsa or hot sauce
