How To Make Chicken Chili

One of our weekly meals is Chicken Chili..  Get creative folks with your chili!  My husband has lost over 40 pounds, besides the products we are putting into our bodies and the daily work out routine, I am totally the Queen in the kitchen.  We really don't count calories, I am just working hard on cooking lean and clean. 

Aprils Directions
 Ingredients:
  •  Pound and half chicken breast bone in.
  • One Half Green pepper
  • One Half Onion
  • Two cans Tomato Sauce
  • Three Cans Beans (White, Black and Chili Bean)
  • One Can Diced Green Chilies and Tomato
  • Spice Packets or season to your taste..
Use Chile Powder, Cumin, Garlic, Smoked paprika, Hungarian paprika.  Experiment with your spices. I also added a Kung Pao Pepper for heat.

Directions:
  • Boil your chicken breast, save the broth for future uses
  • Saute your Green beans and Onions, chop these first into small pieces.
  • Pull chicken off the bone with your fingers and a fork once it has cooled down.
  • Cut up into bite sized pieces.
  • Add Chicken, Onions, Tomato and Green Chiles,Beans and Sauce into your pot along with your Spices and Simmer for an hour. Add any Hot Peppers for added heat.
I usually will make beans on a Sunday night let them soak overnight and have beans ready during the week.

  10. I make a chicken chili with canned chicken breast, vegetable stock, green chilis and Randall Northern beans (and some spices). Yum. Yours sounds great too!
